Why is flue cleaning important?

When your kitchen staff cooks, natural oils and fats become vaporized and are drawn into your exhaust system, eventually building up over time. 70% or less of this grease is trapped by the grease filter, but the rest of it passes through and attaches itself to the exhaust duct and blades of the exhaust fan. This reduces the efficiency of your exhaust system, and if enough grease builds up, a flash fire can result.
