Flue Steam Inc. was founded in 1971 to fill a very specialized niche, which was being created via stricter enforcement by the local health and fire department officials. The authorities having jurisdiction over the operation of commercial cooking environments were starting to require that commercial kitchens become a safer place for employees and for their patrons. National codes had been in place for many years, but enforcement was lax at best.
